The beet soup
Ingredients:
2 beets, half an onion, half a cube of a Knorr chicken bouillon, 1 cup of
For cooking the beets : put the beets in a sauce pan, cover with water and add a pinch of salt. Cook at slow temperature at about 1 hour. A sharp fork should go through it , but beets should stay firm. Put them in a strainer. When they are cold, peel them. Be careful, it is a little messy .
Chop half an onion,cook in a pan until they get lightly brown.
In a sauce pan, heat 1 cup of water and a half of water with half of the chicken bouillon. Mix.
when it comes to put the ingredients in the blender, finish with half of the bouillon, then add what you need, that the soup is smooth and not too liquid. Blend 1 minute .
Place in a container, store in the fridge for at least 2 hours, up to one day, so that the ingredients blend.
when it comes to serve, mix the soup, pour in 2 bowls, add the goat cheese ( or crumble cheese ) and cut some chives on it.
The green pea soup
Ingredients : one glass of frozen green peas
one glass of water
half of a cub of a Knorr chicken bouillon
2 teaspoon of sour cream ( optional )
Mint
In a sauce pan, put the frozen peas in a glass of water, add the half chicken bouillon, cook on slow heat for 7 minutes.
Cut the mint, place everything in the blender, be careful not to put to much liquid, that the soup stay smooth. Blend carefully , place in a container, then store in the fridge like the beet soup.
when it come to serve, add 2 leaves of mint on a teaspoon of sour cream ( optional )
The recipe with avocado : just add in the blender : for 2 people, half an avocado; for 4 people : one avocado and an other glass of green pea and an other glass of water. Add a lemon juice and mint. this is very very good
