Ready to prepare a wonderful French dinner with a twist a la Camille Tardieu? Let’s start with the entré: scallop tartare with a wild garlic & lime dressing, topped with salmon roe, served with oysters and pickled cucumber & shallot.
Ingredients:
5 good quality, big frozen scallops
Oysters, 2-3 per person
Shallot dressing: ½ shallot - thinly diced, ½ a lemon - juiced, ½ a lime - juiced, diced cucumber, olive oil, salt & pepper
Pickled scallops: 5 scallions - chopped, handful of wild garlic - chopped, ½ lemon - juiced, ½ lime - juiced, olive oil, salt and pepper,
1 tsp salmon roe
