In this video we look at the Mirepoix, which is one of the 3 basic French vegetable cuts that anyone interested in French cuisine should know. Chopping a vegetable in a Mirepoix fashion is effectively cutting your vegetable in cubes of 1 to 1.5 cm in size. In English the equivalent expression would be to roughly chop a vegetable.
